Golden Gluten Free Waffles
Our daughter requests these golden gluten free waffles every morning for breakfast. Truly! We have a waffle iron that makes heart shaped waffles, and she loves to dip the individual hearts into organic, pure maple syrup and whipped cream. These yummy beauties are light, delicious and addicting – crunchy on the outside and fluffy on the inside. They are also easy to freeze and reheat, so plan to make a double batch, as they are perfect for brunch or anytime the waffle craving hits.
Golden Waffle Variations
Chocolate Chip: Add 1/2 C (85g or 3 oz) mini chocolate chips or your favorite morsel to the dry ingredients.
Banana: Add 1 medium, over-ripe mashed banana to the wet ingredients. We also switch the cane sugar to brown sugar.
Berries: Add 1/3 – 1/2 cup dry, ripe berries (about 85g) after mixing the dry and wet ingredients. The pieces should be small and bite sized. If using frozen berries, drain them and sprinkle with a small amount of the dry mixture to prevent colored pancakes.
Buttermilk (store purchased): Omit the milk and vinegar and substitute 1 3/4 C (414 ml or 14 oz) of low-fat, store purchased buttermilk.

Description

Ingredients

Dry:
- 227g (8 oz) Flour Farm Organic Gluten Free Flour Blend (2C + 1T + 1tsp spoon & level)
- 2 tsp Double Acting Aluminum Free Baking Powder (10g)
- 1/2 tsp Pink Himalayan Salt (3g)
- 2 T Cane Sugar (28g)
Wet:
- 296 ml (10 oz) Whole Milk (1 1/4 C)
- 1 T Apple Cider Vinegar (15 ml)
- 2 T Butter, melted & cooled (28g or 1 oz) we use salted butter, increase salt by 1/4 tsp if unsalted – optional
- 2 Large Pasture Raised Eggs (100g)
- 1 1/2 tsp Pure Vanilla Extract (7.5 ml)
Instructions
Equipment: Digital Scale (preferred), Waffle Iron, 2 Medium/Large Mixing Bowls, Measuring Cups and Spoons, Whisk, Cooling Rack, Receiving Plate or Platter (I like to warm mine in the oven)
Before You Dive In – Prep: Please Read!
- Make buttermilk: Combine the milk and vinegar in a small bowl or liquid measuring cup. Set aside.
- Melt and cool the butter. If using the microwave, melt the butter for 20-30 seconds and then cool for 10 minutes.
- Preheat the waffle iron according to manufacture instructions, and grease or spray with non-stick spray if necessary.
Step 1: In a large bowl, whisk together the dry ingredients: flour, baking powder, salt and sugar.
Step 2: In a medium sized bowl, whisk together the eggs and vanilla. Add the buttermilk (milk and vinegar) and the melted butter. Whisk until combined.
Step 3: Add the wet ingredients to the dry ingredients. Whisk until all ingredients are incorporated, and well mixed.
Step 4: Spoon batter by 1/3 cup onto the preheated waffle iron (add more or less as needed for your equipment,) and cook each waffle to your perfection.
Step 5: Transfer waffles to a cooling rack (this will help to maintain crispness) or a warm receiving plate. Top with your favorites and serve immediately.

Notes
Make Ahead Time Saver: Weekday mornings are hectic at our house, so I always make extra waffles on the weekend and freeze the rest for a midweek treat. Gluten free waffles are easy to freeze and reheat, and they taste delicious. Place waffles in a freezer bag or container. They do not need to be separated with parchment. When ready to eat, warm them in a toaster or toaster oven set to low for several minutes. They store well in the freezer for up to a month.
