Discussing a gluten free diet is filled with controversy these days. We welcome discussion and debate on any topic and value the insight provided by both professionals and those in the community who choose a gluten free diet out of necessity or not. With controversy comes choice. Choice is good! There are so many gluten free avenues to explore right now: GF products, cook-books, blogs and organizations committed to providing education and support. However, making choices with so many options can prove difficult or frustrating- especially if one’s gluten free flour blend is not easily adaptable, or if the recipe has not been tested before publishing. How? For starters, we want to say that if you are allergic to either almonds or coconuts, then this is not the blend for you. If you do not have a tree nut allergy – read on!
Adaptable: We have one flour blend for every recipe we create or adapt that originally required all purpose wheat flour. Why? Because, it is easier to add whatever works to make the recipe a winner, rather than spend time creating numerous blends for specific recipes. Flour Farm does not have excess starch because we can add the type of starch in the amount necessary to taste great. We are not limited to the type of starch nor the amount of starch to add to a recipe based on the foundation of our flour. The same principle applies when adding binders, leavening agents, proteins, salts and sugars. Not every every recipe requires gums, so we did not add them to the blend. We also understand that there are so many people with varying diets that avoid ingredients such as sugar, salt, eggs, dairy, corn, soy etc, that we set out to create a blend that is flexible enough to adapt to individual needs. Each recipe on our website provides a link to an information page on how to make substitutions. If you have suggestions, or if you find that a substitution does not work for you – please send us an email and let us know! It takes a village to make life successful.
Integrity: Flour Farm flour is blended by a family run business in the Western United States. It is also certified by third party organizations to attest to the quality and integrity of the blend. It took us over a year to obtain the certifications before we were comfortable putting the flour out on the market. In addition, we insisted that the pouch be fully recyclable – including the zipper. Most communities accept our #2 recyclable pouch. We went through three different packaging suppliers before we settled on one that produces their pouches here in the US.
Transparency & Sustainability: We know where each ingredient in the blend comes from – right down to the coordinates. Dave and I travel extensively to check out the fields, farms and mills of each individual flour that makes up our blend. We plan to post pictures of our travel adventures so that you may see for yourself where the flour is sourced.
Tested: Posted recipes have been made repeatedly, tested by members of the community, and approved. One of our responsibilities is to know our flour blend. We have been making products that we sell in our businesses for over two years now, and are excited to share our recipes with you.
Freezability is a beautiful word! We live in a busy world. Planning ahead, baking and freezing are tools we can use to make hectic days easier. Flour Farm is designed to maintain the integrity of the baked good after freezing and reheating. Have you ever tried to microwave a product containing gluten?
