Gluten Free New England Lobster Chowder
You do not have to live on the coast to enjoy a steaming bowl of creamy and comforting gluten free New England Lobster Chowder. Create the perfect recipe for your family, using our basic instructions, (we borrowed the “bones” from Duke’s award winning chowder.) Whether you add lobster, langostinos, (which look like mini-lobsters,) clams or any other marine-based delight, this classic crock of chowder instantly begs to be savored. We serve our gluten free chowder on Christmas Eve with langostinos and home-made croutons. We also make it for Lenten Fridays. In the summer, we add fresh corn. You will want to make it all the time!

Duke’s Seattle: A Classic, Award Winning Recipe
Many moons ago, as Dave and I gained our health back by transitioning to a gluten free diet, we ate at Duke’s Alki Beach restaurant. I, being from the East Coast and feeling nostalgic for New England lobster chowder, ordered Duke’s famous Lobster Mobster Pernod Chowder, (which is actually made with Chilean langostinos.) The creamy texture and taste of Pernod paired with that rich and crave-worthy taste of lobster nearly made me swoon and fall off my stool. I only had a few small bites, but the memory of those delicious bites haunted me. I took the recipe home and adapted it to make gluten free New England Lobster Chowder using our Flour Farm flour.

Instructions
Equipment: Digital Scale (preferred), Heavy bottom pot or 5 qt Dutch oven, Sauce pan, Knife and cutting board, Measuring cups & spoons, Heavy spoon, Whisk, Soup crocks
Before You Dive In – Prep: Please read!
- Thaw fish or seafood if frozen
- Boil cubed sweet potatoes or yams in lightly salted water until al dente – tender, but not soft. Drain and set aside
- Dice, slice or chop all vegetables & herbs
- Heat the water and dissolve the lobster base (or heat the liquid of choice.)
Step 1: In a heavy bottom pan or 5 qt Dutch oven, melt the butter over medium heat. Add the fennel, leek, celery and shallot and saute until vegetables start to soften.
Step 2: Make a roux: sprinkle Flour Farm flour over the softened vegetables. Stir to incorporate and cook for 2-3 minutes.
Step 3: Slowly pour in the hot water/dissolved base mix (or warmed, strained clam juice.) Whisk briskly into the roux to avoid lumpy chowder. Cook on medium for about 2 minutes.
Step 4: Add cream, pepper, thyme and paprika. Cook for another 2-3 minutes.
Step 5: Add (thawed or cooked) seafood, cooked sweet potato, corn and Pernod (if using). Bring temperature up to 190 F/88 C (this only takes a few minutes.) Cook at this temperature for 5 minutes. Remove bay leaf and thyme sprigs.
Step 6: Taste for seasoning and adjust. Remove from heat, divide into bowls, garnish and serve while hot.
Note: Chowder is best eaten within 3 days. Refrigerate in an airtight container. Do not freeze.
