The recipe inspiration for one of our favorite comfort foods – chicken and dumplings, comes from the Fall 2018 edition of King Arthur Flour Sift magazine. On page 92 you will find a recipe titled, “Chicken and Herb Dumplings.” We adapted this delicious recipe to be gluten free using Flour Farm flour.
This post provides ingredients and instructions for gluten free dumplings only. Plop scoops of batter into your favorite chicken and dumplings recipe. If you do use the Sift recipe, substitute Flour Farm flour for the King Arthur Unbleached All-Purpose Flour in the Chicken section of the recipe and follow the directions for the dumplings that are provided below.

Flour Farm Chicken & Dumplings
Equipment: Digital Scale (preferred), 1 oz scoop, Medium Mixing Bowl, Measuring Cups and Spoons, Whisk

Before You Dive In – Prep:
- Prepare your stew, soup or stock
- Mince herbs
- Slice scallions
Choose Gluten Free, Non-GMO, & Organic ingredients.
- 108g (7.6 oz) Flour Farm Organic Gluten Free Flour Blend (2 C)
- 1 tsp Double Acting, Aluminum Free Baking Powder (4g)
- 1/2 tsp Extra Fine Pink Himalayan Salt (3g)
- 1/2 tsp Cane Sugar (2g)
- 1 Large Pasture Raised Egg (50g)
- 118 ml (4 oz) Whole Milk (1/2 C)
- 1/8 C Minced Herbs (parsley, chives, dill, thyme, rosemary, chervil, tarragon…)
- 1 Scallion – finely sliced
Please read prep note before you begin, thank you!
Step 1: Whisk together dry ingredients in a medium sized bowl.
Step 2: In a liquid measuring cup, whisk together the egg and milk. Pour into the dry ingredients.
Step 3: Add the herbs and scallions and thoroughly combine.
Step 4: Drop the dumpling batter into the soup, stock or stew. We use a scoop, which works very well. Cover the surface of the liquid. You should have 7-8 dumplings.
Step 5: Cover the pot and simmer for 15-20 minutes. Dumplings will be fluffy in the middle.
Step 6: Spoon a dumpling or two into each bowl. Ladle the stew over dumplings. Garnish with additional herbs, scallions, or freshly ground pepper if desired. Serve hot.
This recipe is a half version of the original. The full recipe fits only half of the dumpling batter, and we are unable to finish the entire batch of chicken stew in one sitting. We always have leftovers, so we make a fresh batch of dumplings for leftovers. It’s so easy to whip up a batch! If you are feeding a team, then double the recipe.
